Ageing in oak barrels
The aging of the vinegar contributes to the genuine character of each vinegar. All of our vinegars, from the lightest to the Vintage vinegar that stays for a long period of time in oak barrels of French and American oak, rest in our cellar.
The cellar with 600 oak barrels, which is probably among the most exclusive in the sector, allows us to produce unique vinegars. Depending on the time that we let the vinegar lay in the barrels, the oak will give the vinegar nutty, floral or citric aromas in white wine vinegars, aromas of toast, coffee and toffee, balsamic tones as well as contribute to the concentration in our balsamic vinegar in the vinegar made of red wine. The aging in barrels also harmonizes the oak and fruit, the same way as it does with great wines.
